Ingredients

  • 4 cups watermelon rind, peeled and cut into 1-inch cubes 🍉
  • 2 cups water 💧
  • 2 cups granulated sugar

Instructions

  • Prepare the Watermelon Rind

    • Peel the green outer skin from the watermelon rind and remove any pink flesh.
    • Cut the peeled rind into 1-inch cubes for even cooking.
  • Cook the Rind

    • In a large saucepan, combine the watermelon rind and 2 cups of water.
    • Bring to a boil over medium heat, then reduce the heat and let it simmer for 10-15 minutes, until the rind is tender.
    • Drain and set aside.
  • Make the Syrup

    • In the same saucepan, mix 2 cups of sugar with 1 cup of fresh water (or more to cover the rind).
    • Bring the mixture to a boil, stirring until the sugar dissolves completely.
  • Candy the Rind

    • Add the cooked rind to the syrup and reduce the heat to low.
    • Simmer for about 1 hour, stirring occasionally, until the rind turns translucent and the syrup thickens.
  • Dry the Candy

    • Remove the candied rind with a slotted spoon and place it on a wire rack over a baking sheet.
    • Let it dry at room temperature for several hours or overnight.
  • Optional: Coat with Sugar

    • Once dry, roll the pieces in granulated sugar for a crystallized effect.
  • Store the Candy

    • Store in an airtight container at room temperature for up to 2 weeks

Notes

  • For extra flavor, add cinnamon, vanilla, or citrus zest to the syrup.
  • If the candy feels too sticky, let it dry longer before storing.
