Ingredients
Scale
- 4 cups watermelon, cubed (seedless)
- 1 cup feta cheese, crumbled
- ½ small red onion, thinly sliced
- ½ cup fresh mint leaves, chopped
- ¼ cup fresh basil leaves, chopped (optional)
- ¼ cup balsamic glaze or reduction
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh lime juice
- Salt and black pepper to taste
- ¼ cup toasted almonds or walnuts (optional, for crunch)
Instructions
Step 1: Prepare the Ingredients
- Cut the watermelon into bite-sized cubes and place them in a large bowl.
- Thinly slice the red onion. For a milder flavor, soak the slices in cold water for 10 minutes, then drain.
- Chop the mint and basil leaves (if using).
Step 2: Assemble the Salad
- Arrange the watermelon cubes evenly in a serving bowl or platter.
- Sprinkle the crumbled feta cheese over the watermelon.
- Add the sliced red onion, chopped mint, and basil for extra flavor.
Step 3: Dress the Salad
- Drizzle extra virgin olive oil and fresh lime juice over the salad.
- Lightly season with a pinch of salt and black pepper (optional).
Step 4: Garnish & Serve
- Drizzle balsamic glaze over the salad for a sweet-tangy contrast.
- Sprinkle toasted almonds or walnuts (if using) for an added crunch.
- Serve immediately, or chill for 15 minutes before serving for extra freshness.
Notes
- For extra crunch, add toasted pumpkin seeds or pistachios instead of almonds.
- To make ahead, prepare the ingredients separately and assemble just before serving.
- Pair with grilled chicken or seafood for a complete meal.
- Skip the salt if using feta, as it already adds a salty balance
