  • 4 cups watermelon, cubed (seedless)
  • 1 cup feta cheese, crumbled
  • ½ small red onion, thinly sliced
  • ½ cup fresh mint leaves, chopped
  • ¼ cup fresh basil leaves, chopped (optional)
  • ¼ cup balsamic glaze or reduction
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lime juice
  • Salt and black pepper to taste
  • ¼ cup toasted almonds or walnuts (optional, for crunch)

Instructions

Step 1: Prepare the Ingredients

  1. Cut the watermelon into bite-sized cubes and place them in a large bowl.
  2. Thinly slice the red onion. For a milder flavor, soak the slices in cold water for 10 minutes, then drain.
  3. Chop the mint and basil leaves (if using).

Step 2: Assemble the Salad

  1. Arrange the watermelon cubes evenly in a serving bowl or platter.
  2. Sprinkle the crumbled feta cheese over the watermelon.
  3. Add the sliced red onion, chopped mint, and basil for extra flavor.

Step 3: Dress the Salad

  1. Drizzle extra virgin olive oil and fresh lime juice over the salad.
  2. Lightly season with a pinch of salt and black pepper (optional).

Step 4: Garnish & Serve

  1. Drizzle balsamic glaze over the salad for a sweet-tangy contrast.
  2. Sprinkle toasted almonds or walnuts (if using) for an added crunch.

Notes

  • For extra crunch, add toasted pumpkin seeds or pistachios instead of almonds.
