For the Peanut Dressing:

  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 2 tablespoons water (to thin out dressing

Instructions

  • Prepare the Salad – In a large mixing bowl, combine shredded cabbage, carrots, bell pepper, cucumber, shredded chicken, and chopped cilantro.
  • Make the Dressing – In a separate bowl, whisk together peanut butter, soy sauce, rice vinegar, honey or maple syrup, lime juice, garlic, ginger, and water until smooth. Adjust consistency by adding more water if needed.
  • Toss the Salad – Drizzle the peanut dressing over the salad and toss everything together until well coated.
  • Add Toppings – Sprinkle roasted peanuts, sesame seeds, and extra cilantro on top for added crunch and freshness.
