This Sweet & Spicy Pickle Relish is the perfect combination of tangy, sweet, and mildly spicy flavors. It’s a great way to add a punch of taste to burgers, sandwiches, hot dogs, and even grilled meats. Made with fresh cucumbers, green peppers, and a blend of spices, this homemade relish is easy to prepare and can be stored for months.
Ingredients

3 cups grated green pepper

3 cups grated pickling cucumber
 - 
1 cup minced or grated onion
 - 
2 cups apple cider vinegar, divided
 - 
1 cup granulated sugar
 - 
1 tablespoon kosher salt
 - 
1 tablespoon mustard seeds
 - 
1/2 teaspoon celery seeds
 - 
1 teaspoon red chili flakes
 
Instructions

Combine vegetables: In a large, non-reactive pot, mix the grated green pepper, cucumber, and onion.

Simmer vegetables: Add 1 cup of apple cider vinegar and bring to a simmer. Cook for 30 minutes, stirring occasionally, until softened and the liquid is reduced by about one-third.
 - 
Drain the mixture: Using a fine-mesh strainer, drain and discard the excess liquid. Return the drained vegetables to the pot.
 - 
Add seasonings: Stir in the remaining 1 cup of apple cider vinegar, sugar, kosher salt, mustard seeds, celery seeds, and red chili flakes.

Cook and blend flavors: Bring the mixture to a simmer and cook for 5 minutes, ensuring the sugar is dissolved and flavors are well combined.

Fill sterilized jars: Ladle the hot relish into sterilized glass jars, leaving 1/2 inch of headspace. Wipe the rims clean.

Seal and process: Place lids on the jars and process them in a boiling water bath for 10 minutes to seal. Let them cool completely before storing.
 
Notes

Store sealed jars in a cool, dark place for up to 12 months. Refrigerate after opening and use within 4 to 6 weeks.

Adjust sweetness by adding more or less sugar to taste.

Increase chili flakes for a spicier relish.
