Ingredients

  • 4 cups fresh spinach (baby spinach preferred)

  • 1 ½ cups fresh strawberries, hulled and sliced

  • ½ cup crumbled feta cheese

  • ¼ cup walnuts, chopped (optional)

  • 2 tbsp red onion, thinly sliced (optional)

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 1 tsp honey (optional)

  • Salt and pepper to taste


Instructions

  1. Wash and dry the spinach leaves thoroughly. Set them aside.

  2. Hull and slice the strawberries. If using, thinly slice the red onion and chop the walnuts.

  3. In a small bowl, whisk together olive oil, balsamic vinegar, honey (if using), salt, and pepper to make the dressing.

  4. In a large mixing bowl, combine the spinach, strawberries, feta, walnuts, and red onion (if using).

  5. Drizzle the dressing over the salad and toss gently to combine.
