Description

These Strawberry Shortcake Protein Bites are packed with protein, natural sweetness, and a deliciously chewy texture. Made with freeze-dried strawberries, oats, and vanilla protein powder, they are the perfect snack for busy days, workouts, or a healthy treat!


Ingredients

Scale
  • 1 cup freeze-dried strawberries
  • 1 cup rolled oats
  • 1 cup vanilla protein powder
  • 2 tbsp honey or maple syrup
  • 2 tbsp almond butter
  • 1 tsp vanilla extract
  • Pinch of salt
  • 12 tbsp water (if needed to help combine)

Instructions

  • In a food processor, pulse the freeze-dried strawberries until finely chopped.
  • Add the oats, vanilla protein powder, honey (or maple syrup), almond butter, vanilla extract, and salt to the processor. Pulse until the mixture begins to come together.
  • If the mixture is too dry, add 1-2 tbsp of water, pulsing again until the dough sticks together.
  • Scoop out small portions and roll into bite-sized balls using your hands. Place them on a lined baking sheet.
  • Chill the bites in the refrigerator for at least 30 minutes before serving.

Notes

  • For extra texture, roll the bites in shredded coconut or crushed nuts before chilling.
  • Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 2 months.
  • If you prefer a nut-free version, use sunflower seed butter instead of almond butter.
