The combination of frozen strawberries, coconut milk, and a touch of sweetness makes this dessert both light and indulgent. It’s dairy-free, vegan, and can be enjoyed by anyone looking for a cool, tropical-inspired dessert.
Ingredients
-
2 cups frozen strawberries
-
1/2 cup coconut milk (or any dairy-free milk of your choice)
-
2–3 tbsp honey or maple syrup (adjust sweetness to taste)
-
1/2 tsp vanilla extract
-
A pinch of salt (optional)
Instructions
-
In a high-speed blender or food processor, add the frozen strawberries, coconut milk, honey (or maple syrup), vanilla extract, and a pinch of salt.
-
Blend on high for 1-2 minutes or until smooth and creamy. Scrape down the sides if necessary.
-
Check the texture. It should be thick, like soft-serve ice cream. If it’s too thick, add a little more coconut milk; if it’s too thin, add more frozen strawberries.
-
Serve immediately for a soft-serve treat or freeze for 30-60 minutes for a firmer consistency.
-
Garnish with fresh strawberries, mint, or a drizzle of honey, if desired.
Notes
-
For a creamier texture, you can add a scoop of dairy-free vanilla ice cream.
-
Store leftovers in an airtight container in the freezer for up to 2 weeks. Let soften before serving.
-
You can also use other frozen fruits like mango or pineapple for a fun twist on this recipe.
