Description

  • 2 cups frozen strawberries

  • 1/2 cup coconut milk (or any dairy-free milk of your choice)

  • 23 tbsp honey or maple syrup (adjust sweetness to taste)

  • 1/2 tsp vanilla extract

  • A pinch of salt (optional)


Instructions

  • In a high-speed blender or food processor, add the frozen strawberries, coconut milk, honey (or maple syrup), vanilla extract, and a pinch of salt.

  • Blend on high for 1-2 minutes or until smooth and creamy. Scrape down the sides if necessary.

  • Check the texture. It should be thick, like soft-serve ice cream. If it’s too thick, add a little more coconut milk; if it’s too thin, add more frozen strawberries.

  • Serve immediately for a soft-serve treat or freeze for 30-60 minutes for a firmer consistency.

  • Garnish with fresh strawberries, mint, or a drizzle of honey, if desired.

Notes

  • For a creamier texture, you can add a scoop of dairy-free vanilla ice cream.

  • Store leftovers in an airtight container in the freezer for up to 2 weeks. Let soften before serving.
