Description

A moist and flavorful strawberry bread with a sweet glaze, perfect for breakfast or a snack. This easy recipe is packed with fresh strawberries and a soft, tender crumb.


Ingredients

For the Bread:
  • 3/4 cup granulated sugar

  • 1/2 cup milk

  • 1/2 cup vegetable oil

  • 1 egg

  • 1 tsp vanilla extract

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • 1/4 tsp salt

  • 2 cups strawberries (diced)

  • 2 Tbsp all-purpose flour (for coating strawberries)

For the Glaze:
  • 2 cups powdered sugar

  • 2 Tbsp butter (melted)

  • 1/2 cup strawberries (diced)

  • 1/2 tsp vanilla extract


Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.

  • In a medium bowl, whisk together the sugar, milk, vegetable oil, egg, and vanilla extract until smooth.

  • Stir in the baking powder and salt, then gradually add the flour, mixing just until combined.

  • Toss the diced strawberries with 2 tablespoons of flour to prevent sinking, then gently fold them into the batter.

  • Pour the batter into the greased loaf pan and bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.

  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  • To make the glaze, mix together the powdered sugar, melted butter, diced strawberries, and vanilla extract until smooth. Adjust consistency with a little milk if needed.

  • Drizzle the glaze over the cooled bread. Let it set before slicing and serving.

Notes

  • Use fresh, ripe strawberries for the best flavor.

  • For extra crunch, add chopped nuts like walnuts or almonds.

  • Store at room temperature for 2 days, refrigerate for up to 5 days, or freeze for up to 3 months.
