Ingredients
For the Bread:
-
3/4 cup granulated sugar
-
1/2 cup milk
-
1/2 cup vegetable oil
-
1 egg
-
1 tsp vanilla extract
-
2 cups all-purpose flour
-
2 tsp baking powder
-
1/4 tsp salt
-
2 cups strawberries (diced)
-
2 Tbsp all-purpose flour (for coating strawberries)
For the Glaze:
-
2 cups powdered sugar
-
2 Tbsp butter (melted)
-
1/2 cup strawberries (diced)
-
1/2 tsp vanilla extract
Instructions
-
Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
-
In a medium bowl, whisk together the sugar, milk, vegetable oil, egg, and vanilla extract until smooth.
-
Stir in the baking powder and salt, then gradually add the flour, mixing just until combined.
-
Toss the diced strawberries with 2 tablespoons of flour to prevent sinking, then gently fold them into the batter.
-
Pour the batter into the greased loaf pan and bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
-
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
-
To make the glaze, mix together the powdered sugar, melted butter, diced strawberries, and vanilla extract until smooth. Adjust consistency with a little milk if needed.
-
Drizzle the glaze over the cooled bread. Let it set before slicing and serving.
Notes
-
Use fresh, ripe strawberries for the best flavor.
-
For extra crunch, add chopped nuts like walnuts or almonds.
