Ingredients

1 box cornbread mix (or homemade cornbread recipe)

1/2 cup milk

2 eggs

1/4 cup unsalted butter, melted

2 tbsp sugar

1 tsp baking powder

For the Honey Butter Glaze:

1/4 cup unsalted butter, melted

3 tbsp honey

Pinch of cinnamon (optional)

Instructions

Preheat the oven to 375°F (190°C). Grease a mini muffin tin or line with paper liners.

In a large bowl, mix together the cornbread mix, milk, eggs, melted butter, sugar, baking powder, and salt. Stir until smooth.

Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

Bake for 12-15 minutes, or until a toothpick inserted comes out clean.

While baking, melt the butter for the glaze in a small saucepan and stir in honey and cinnamon (if using). Let the mixture warm.
