These Southern-Style Honey Butter Cornbread Poppers are a simple yet sophisticated dish perfect for any occasion.   • 1 box cornbread mix (or homemade cornbread recipe)

  • 1/2 cup milk

  • 2 eggs

  • 1/4 cup unsalted butter, melted

  • 2 tbsp sugar

  • 1 tsp baking powder

  • 1/4 tsp salt

  • For the Honey Butter Glaze:

    • 1/4 cup unsalted butter, melted

    • 3 tbsp honey

    • Pinch of cinnamon (optional)


Instructions

  • Preheat the oven to 375°F (190°C). Grease a mini muffin tin or line with paper liners.

  • In a large bowl, mix together the cornbread mix, milk, eggs, melted butter, sugar, baking powder, and salt. Stir until smooth.

  • Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

  • Bake for 12-15 minutes, or until a toothpick inserted comes out clean.

  • While baking, melt the butter for the glaze in a small saucepan and stir in honey and cinnamon (if using). Let the mixture warm.

  • Once the cornbread poppers are done, remove them from the oven and immediately brush them with the honey butter glaze.

  • Allow to cool slightly before serving.

Notes

  • For added crunch, sprinkle chopped walnuts or almonds over the poppers before baking.

  • These cornbread poppers can be stored in an airtight container for up to 3 days. Reheat gently in the microwave or oven.

  • For a savory twist, try adding shredded cheddar cheese or crumbled bacon (or turkey bacon) to the batter.
