  • 1 lb (450g) large shrimp, peeled and deveined

  • 1 cup orzo pasta

  • 4 cloves garlic, minced

  • 1 lemon, zest and juice

  • 2 tbsp olive oil

  • 2 tbsp butter

  • 1/2 cup chicken broth

  • 2 tbsp fresh parsley, chopped (for garnish)

  • Salt and pepper, to taste


Instructions

  • Preheat the oven to 375°F (190°C). Line a baking dish with parchment paper for easy cleanup.

  • Wash and dry the shrimp, then set aside.

  • Bring a large pot of salted water to a boil and cook the orzo according to package instructions. Drain and set aside.

  • In a large skillet, heat olive oil over medium heat. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and are cooked through. Remove from the skillet and set aside.

  • In the same skillet, melt butter and sauté the garlic for 1-2 minutes until fragrant.

  • Add chicken broth, lemon juice, and lemon zest to the skillet. Stir to combine and let simmer for 2-3 minutes.

  • Return the shrimp to the skillet and add the cooked orzo. Toss everything together to coat the shrimp and orzo in the sauce.

  • Season with salt and pepper to taste. Garnish with fresh parsley and serve immediately.

Notes

  • For added crunch, sprinkle chopped walnuts or almonds over the dish before serving.

  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet or microwave.

  • For a richer flavor, you can add a bit of heavy cream to the sauce for a creamy variation.
