1 lb (450g) large shrimp, peeled and deveined

1 cup orzo pasta

4 cloves garlic, minced

1 lemon, zest and juice

2 tbsp olive oil

2 tbsp butter

1/2 cup chicken broth

2 tbsp fresh parsley, chopped (for garnish)

Salt and pepper, to taste
Instructions

Preheat the oven to 375°F (190°C). Line a baking dish with parchment paper for easy cleanup.

Wash and dry the shrimp, then set aside.

Bring a large pot of salted water to a boil and cook the orzo according to package instructions. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and are cooked through. Remove from the skillet and set aside.

In the same skillet, melt butter and sauté the garlic for 1-2 minutes until fragrant.

Add chicken broth, lemon juice, and lemon zest to the skillet. Stir to combine and let simmer for 2-3 minutes.

Return the shrimp to the skillet and add the cooked orzo. Toss everything together to coat the shrimp and orzo in the sauce.
