Ingredients

400 g chicken thighs (cut into small pieces)

2 cups scallions (chopped, white and green parts separated)

4 tablespoons oil

2 tablespoons soy sauce

1/2 tablespoon dark soy sauce

1/2 tablespoon oyster sauce

1/2 teaspoon black pepper powder (adjust to taste)

2 tablespoons cornstarch
Instructions

Marinate the Chicken

In a bowl, mix chicken thighs with soy sauce, dark soy sauce, oyster sauce, black pepper, and cornstarch.

Let it marinate for 10 minutes while you prepare the scallions.

Pan-Fry the Chicken

Heat oil in a non-stick pan over medium heat.

Add the marinated chicken and cook for 2-3 minutes without stirring to develop a golden-brown crust.

Stir and cook for another 5-6 minutes until fully cooked.

Add the Scallions

First, add the white parts of the scallions and stir-fry for 1-2 minutes until soft.

Then, toss in the green parts and stir for 10-20 seconds before turning off the heat.

For a thicker sauce, mix 1 teaspoon cornstarch with 2 tablespoons water and add it during cooking.
