Description

Scallion Chicken is a quick and flavorful dish made with tender chicken thighs, aromatic scallions, and a savory sauce. This easy stir-fry comes together in just 20 minutes, making it perfect for a busy weeknight meal. Serve it with rice or noodles for a satisfying dinner!


Ingredients

  • 400 g chicken thighs (cut into small pieces)

  • 2 cups scallions (chopped, white and green parts separated)

  • 4 tablespoons oil

  • 2 tablespoons soy sauce

  • 1/2 tablespoon dark soy sauce

  • 1/2 tablespoon oyster sauce

  • 1/2 teaspoon black pepper powder (adjust to taste)

  • 2 tablespoons cornstarch


Instructions

  1. Marinate the Chicken

    • In a bowl, mix chicken thighs with soy sauce, dark soy sauce, oyster sauce, black pepper, and cornstarch.

    • Let it marinate for 10 minutes while you prepare the scallions.

  2. Pan-Fry the Chicken

    • Heat oil in a non-stick pan over medium heat.

    • Add the marinated chicken and cook for 2-3 minutes without stirring to develop a golden-brown crust.

    • Stir and cook for another 5-6 minutes until fully cooked.

  3. Add the Scallions

    • First, add the white parts of the scallions and stir-fry for 1-2 minutes until soft.

    • Then, toss in the green parts and stir for 10-20 seconds before turning off the heat.

  4. Serve

    • Transfer to a serving plate and garnish with extra black pepper or scallions if desired.

    • Serve hot with steamed rice or noodles.

Notes

  • For a thicker sauce, mix 1 teaspoon cornstarch with 2 tablespoons water and add it during cooking.

  • Add chili flakes or chili oil for a spicy kick.

  • Store leftovers in an airtight container in the fridge for up to 3 days.
