  • 1 pound small gold potatoes (cut in half)

  • 2 tablespoons olive oil

  • 1½ teaspoons sea salt

  • 1 teaspoon freshly ground black pepper

  • ⅓ cup unsalted butter (melted)

  • ¾ cup grated parmesan cheese

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ teaspoon celery salt

  • 1 teaspoon Italian seasoning

  • Fresh herbs (for garnish, optional)

  • Grated cheese (for garnish, optional)


Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

  • Toss the halved potatoes with olive oil, sea salt, and black pepper.

  • In a separate bowl, combine the melted butter, parmesan cheese, garlic powder, onion powder, celery salt, and Italian seasoning.

  • Take each potato half and dip the cut side into the cheese mixture, gently pressing so the cheese adheres.

  • Arrange the potatoes on the baking sheet with the cheese-side facing down. Sprinkle any leftover cheese mixture over the potatoes.

  • Bake for 25-30 minutes or until the potatoes are tender and the cheese is crispy.

  • Remove from the oven and let cool for 2-3 minutes. Carefully transfer the potatoes to a serving plate.

  • Garnish with fresh herbs and grated cheese, if desired. Serve warm.

Notes

  • For added crunch, sprinkle chopped walnuts or almonds over the potatoes before baking.

  • These baked potatoes can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or enjoy cold.
