Ingredients

8 sheets phyllo dough (thawed if frozen)

200g block feta cheese, cut into 8 sticks

3 tablespoons olive oil or melted butter (for brushing)

2 tablespoons chili-infused honey (plus more for drizzling)

1 teaspoon chopped fresh thyme or oregano (optional)

Pinch of chili flakes (optional for extra heat)
Instructions

Preheat the oven to 200°C (390°F). Line a baking sheet with parchment paper.

Lay one sheet of phyllo dough on a clean surface. Brush lightly with olive oil or melted butter, then fold it lengthwise to create a long rectangle.

Place a stick of feta cheese at the bottom of the folded phyllo. If desired, sprinkle with herbs and chili flakes.

Fold the sides over the feta and roll up tightly. Place the roll seam-side down on the baking sheet.

Repeat with the remaining phyllo and feta, brushing each sheet with oil or butter before rolling.

Brush the tops of the rolls with more olive oil or melted butter.

Bake in the preheated oven for 18–20 minutes, or until golden brown and crispy.

Drizzle with chili-infused honey while still hot and serve immediately.

For extra crunch, add chopped walnuts or sunflower seeds inside the rolls before baking.

You can substitute feta with goat cheese, ricotta, or cream cheese for a different flavor.
