For the Chicken:

- 2 tbsp olive oil
For the Sauce:
- 2 tbsp butter
- 2 tbsp fresh minced garlic
- ½ cup chicken broth
- ⅓ cup heavy whipping cream
- Sun-dried tomatoes (to taste)
- ½ cup fresh shredded Parmesan or Italian cheese
- Salt (to taste)
- Black pepper (to taste)
- Italian herbs (to taste)
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken thighs with onion powder, garlic powder, Cajun seasoning, black pepper, paprika, and Italian herbs.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown. Transfer to a baking dish.
- In the same skillet, melt butter and sauté garlic for 2-3 minutes until fragrant.
- Pour in the chicken broth, then add sun-dried tomatoes and heavy whipping cream. Stir well and let it simmer for 5 minutes.
- Gradually mix in Parmesan cheese, stirring until melted and the sauce is smooth. Season to taste with salt, pepper, and Italian herbs.
- Pour the creamy sauce over the chicken in the baking dish.
- Bake for 30-35 minutes, or until the chicken is fully cooked (internal temperature of 165°F (75°C)).
