Ingredients

1 lb large shrimp, peeled and deveined

1 bunch fresh asparagus, trimmed and cut into 1-inch pieces

3 cloves garlic, minced

1 lemon (zested and juiced)

2 tbsp olive oil

2 tbsp butter

Fresh parsley for garnish (optional)

Instructions

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the asparagus and cook for 3-4 minutes, until tender but still crisp. Remove from the skillet and set aside.

In the same skillet, add the remaining olive oil and butter. Once the butter is melted, add the minced garlic and cook for 30 seconds, until fragrant.

Add the shrimp to the skillet and season with salt and pepper. Cook for 2-3 minutes per side, or until shrimp turn pink and opaque.

Return the asparagus to the skillet and add the lemon juice and zest. Stir to combine, allowing the shrimp and asparagus to soak up the lemon-garlic sauce.
