Description

This Key Lime Pie Chia Pudding is a creamy, tangy, and naturally sweet treat inspired by the classic pie. Made with simple, wholesome ingredients, it’s an easy no-bake dessert or breakfast that you can prepare in advance!


Ingredients

  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk (or milk of choice)
  • 1/4 cup fresh key lime juice (about 45 key limes)
  • 23 tablespoons maple syrup or honey (adjust to taste)

Instructions

  • In a bowl, combine chia seeds, almond milk, key lime juice, and maple syrup or honey. Stir well to prevent clumping.
  • Cover the bowl and refrigerate for at least 2 hours (or overnight) to allow the chia seeds to absorb the liquid and form a pudding-like consistency.
  • Once set, give the mixture a good stir. If it’s too thick, add a splash of almond milk to adjust the consistency.
  • Serve in individual jars or bowls and add your favorite toppings.

Notes

  • For a stronger lime flavor, add extra fresh key lime juice.
