- 1/4 cup chia seeds
- 1 cup unsweetened almond milk (or milk of choice)
- 1/4 cup fresh key lime juice (about 4–5 key limes)
- 2–3 tablespoons maple syrup or honey (adjust to taste)
Instructions
- In a bowl, combine chia seeds, almond milk, key lime juice, and maple syrup or honey. Stir well to prevent clumping.
- Cover the bowl and refrigerate for at least 2 hours (or overnight) to allow the chia seeds to absorb the liquid and form a pudding-like consistency.
- Once set, give the mixture a good stir. If it’s too thick, add a splash of almond milk to adjust the consistency.
- Serve in individual jars or bowls and add your favorite toppings.

- For a stronger lime flavor, add extra fresh key lime juice.
