  • 3 tablespoons honey

  • 3 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 tablespoon soy sauce (or tamari for gluten-free)

  • 1 teaspoon dried thyme (or fresh thyme for extra flavor)

  • Salt and pepper, to taste

  • Fresh parsley, chopped (optional for garnish)


Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

  • Wash and dry the mushrooms, then slice them in half if they are large, or leave them whole for a more rustic presentation. Remove any dirt or debris.

  • In a small bowl, whisk together the honey, olive oil, minced garlic, soy sauce, and dried thyme. Add salt and pepper to taste.

  • Place the cleaned mushrooms in a large mixing bowl and pour the honey and garlic mixture over them. Toss gently to coat each mushroom evenly.

  • Arrange the mushrooms in a single layer on the prepared baking sheet.

  • Roast the mushrooms for 20-25 minutes, tossing them halfway through, until they are golden brown and tender.

  • Remove from the oven and let cool slightly. Garnish with fresh parsley if desired. Serve warm.
