Ingredients
-
1 lb (450g) whole button mushrooms (or any variety you prefer)
-
3 tablespoons honey
-
3 tablespoons olive oil
-
4 cloves garlic, minced
-
1 tablespoon soy sauce (or tamari for gluten-free)
-
1 teaspoon dried thyme (or fresh thyme for extra flavor)
-
Salt and pepper, to taste
-
Fresh parsley, chopped (optional for garnish)
Instructions
-
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
-
Wash and dry the mushrooms, then slice them in half if they are large, or leave them whole for a more rustic presentation. Remove any dirt or debris.
-
In a small bowl, whisk together the honey, olive oil, minced garlic, soy sauce, and dried thyme. Add salt and pepper to taste.
-
Place the cleaned mushrooms in a large mixing bowl and pour the honey and garlic mixture over them. Toss gently to coat each mushroom evenly.
-
Arrange the mushrooms in a single layer on the prepared baking sheet.
-
Roast the mushrooms for 20-25 minutes, tossing them halfway through, until they are golden brown and tender.
-
Remove from the oven and let cool slightly. Garnish with fresh parsley if desired. Serve warm.
Notes
-
For added crunch, sprinkle chopped walnuts or almonds over the mushrooms before roasting.
-
These roasted mushrooms can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or enjoy cold in salads or on toast.
-
For a different flavor profile, substitute the feta with blue cheese or goat cheese.
