Instructions
- Combine Ingredients: In a medium saucepan, mix the apple cider vinegar, soy sauce, brown sugar, water, and lemon juice. Stir in the ground ginger, mustard, onion powder, garlic powder, cloves, cinnamon, black pepper, and cayenne pepper (if using).
- Simmer the Sauce: Bring the mixture to a gentle simmer over medium heat. Stir occasionally and let it cook for 10-15 minutes, allowing the flavors to blend.
- Cool & Strain: Remove from heat and let the sauce cool. Strain through a fine-mesh sieve to remove any solid bits.
- Store: Pour the sauce into an airtight glass jar or bottle and refrigerate for up to 2-3 months. Shake well before using.

- For a sweeter flavor, add an extra teaspoon of brown sugar or honey.
- If you prefer a stronger umami taste, try adding a splash of mushroom soy sauce or tamari.
