- 2 cups ripe mangoes, peeled and diced
- 1 ½ cups granulated sugar (adjust to taste)
- 2 tbsp freshly squeezed lemon juice
- 1 tsp lemon zest (optional)
- ¼ cup water (if needed)
Instructions
- Prepare the fruit: Wash and chop the strawberries. Peel and dice the mangoes into small pieces.
- Cook the fruit mixture: In a medium saucepan over medium heat, combine the strawberries, mangoes, and lemon juice. Stir and let the fruit release its juices. Add ¼ cup water if needed to prevent sticking.
- Add sugar and simmer: Stir in the sugar and mix well. Reduce the heat and let the mixture simmer for 20-25 minutes, stirring frequently.
- Mash or blend (optional): Use a potato masher for a chunkier texture or an immersion blender for a smoother jam.
- Check for doneness: Place a spoonful of jam on a cold plate. If it thickens and holds its shape, it’s ready. If too runny, continue simmering for a few more minutes and test again.
- Store the jam: Remove from heat and let it cool slightly. Transfer to sterilized glass jars, seal tightly, and allow it to cool before refrigerating.
