Ingredients

Scale
  • 2 boneless, skinless chicken breasts

  • 4 cups broccoli florets

  • 1 tablespoon olive oil (for grilling the chicken)

  • Salt and pepper to taste

  • 1 tablespoon olive oil (for sautéing broccoli)

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/4 teaspoon red pepper flakes (optional)

For the Creamy Garlic Sauce:

  • 1/2 cup Greek yogurt

  • 1/4 cup mayonnaise

  • 3 cloves garlic, minced

  • 1 tablespoon lemon juice

  • 1 tablespoon Dijon mustard

  • 1 tablespoon fresh parsley, chopped

  • Salt and pepper to taste

  • 1 tablespoon water (if needed to thin the sauce)

Instructions

  • Prepare the Chicken:
Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Grill over medium-high heat for 6-7 minutes per side, until the internal temperature reaches 165°F (75°C). Slice the chicken once cooked.

  • Cook the Broccoli:
Heat a tablespoon of olive oil in a pan over medium heat. Sauté the broccoli for 5-7 minutes, or until tender-crisp. Season with salt, pepper, garlic powder, and onion powder.

  • Make the Creamy Garlic Sauce:
In a small bowl, whisk together Greek yogurt, mayonnaise, garlic, lemon juice, Dijon mustard, and parsley. Add salt and pepper to taste. Thin with water if necessary.

  • Assemble the Bowls:
Place the sautéed broccoli in bowls and top with sliced grilled chicken. Drizzle with creamy garlic sauce and serve!

Notes

  • For extra crunch, sprinkle with chopped walnuts or almonds before serving.

  • Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stovetop.

  • If you prefer a tangier sauce, add a little more lemon juice or Dijon mustard.
