Ingredients

  • 2 tablespoons olive oil (divided)

  • 3 tablespoons unsalted butter (divided)

  • 3 cups Yukon Gold potatoes (quartered)

  • 3 garlic cloves (minced)

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 1 teaspoon dried oregano

  • 1 pound sirloin steak (cut into bite-sized pieces)

  • Salt and black pepper (to taste)

  • Fresh parsley (optional, for garnish)


Instructions

  • Cook the Potatoes:

    • Heat 1 tablespoon olive oil and 1 tablespoon butter in a large cast-iron skillet over medium-high heat.

    • Add the quartered potatoes, minced garlic, thyme, rosemary, and oregano. Stir well.

    • Cook for 3 minutes, stir, and cook for another 3 minutes until the potatoes are golden brown and fork-tender. Remove from the skillet and set aside.

  • Cook the Steak:

    • Increase heat to high and add the remaining 1 tablespoon olive oil.

    • Add the steak bites in a single layer. Let them sear for 1 minute before stirring.

    • Cook for another 2–3 minutes, stirring occasionally, until golden brown.

    • Reduce heat to medium-low and add the remaining 2 tablespoons butter. Stir to coat the steak in the garlic butter and herb-infused juices.

  • Combine and Serve:

    • Return the cooked potatoes to the skillet and mix everything well.

    • Let them cook together for 1–2 minutes to absorb all the flavors.

    • Season with salt and black pepper to taste.

    • Garnish with fresh parsley (optional) and serve warm.

Notes

  • For crispier potatoes, soak them in cold water for 10 minutes before cooking.

  • For extra flavor, add a pinch of red pepper flakes or smoked paprika.

  • Store leftovers in an airtight container for up to 3 days. Reheat in a skillet for best results.
