3 cups Yukon Gold potatoes (quartered)

1 teaspoon dried oregano

1 pound sirloin steak (cut into bite-sized pieces)

Instructions

Cook the Potatoes:

Heat 1 tablespoon olive oil and 1 tablespoon butter in a large cast-iron skillet over medium-high heat.

Add the quartered potatoes, minced garlic, thyme, rosemary, and oregano. Stir well.

Cook for 3 minutes, stir, and cook for another 3 minutes until the potatoes are golden brown and fork-tender. Remove from the skillet and set aside.

Cook the Steak:

Increase heat to high and add the remaining 1 tablespoon olive oil.

Add the steak bites in a single layer. Let them sear for 1 minute before stirring.

Cook for another 2–3 minutes, stirring occasionally, until golden brown.

Reduce heat to medium-low and add the remaining 2 tablespoons butter. Stir to coat the steak in the garlic butter and herb-infused juices.
