Ingredients
Scale
For the Fritters:
- 1 cup flour 🌾
- 1 teaspoon salt 🧂
- 1 teaspoon baking powder 🍞
- 1 tablespoon sugar 🍬
- 1/2 teaspoon cinnamon (optional)
- 1/3 cup milk 🥛
- 1 egg 🥚
- 1/2 teaspoon vanilla extract 🌿
- 1 cup fresh peaches, diced 🍑
- Oil for frying 🛢️
Instructions
- In a mixing bowl, whisk together flour, salt, baking powder, sugar, and cinnamon (if using).
- In a separate bowl, beat the egg and mix in the milk and vanilla extract. Pour into the dry ingredients and stir until just combined.
- Gently fold in the diced peaches, ensuring they are evenly distributed.
- Heat oil in a deep frying pan to 350°F (175°C).
- Using a spoon, drop small portions of batter into the hot oil. Fry for 2-3 minutes per side or until golden brown.
- Remove the fritters and place them on a paper towel-lined plate to drain excess oil.
- Serve warm with powdered sugar, honey, or cinnamon sugar for extra sweetness
Notes
- For extra crispiness, replace 1-2 tablespoons of flour with cornstarch.
- To store leftovers, keep in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat in the oven at 325°F (165°C) for best results.
- If using canned or frozen peaches, drain and pat them dry to prevent excess moisture in the batter.
