Description

These Fluffy Cottage Cheese Blueberry Cloud Breads are light, airy, and mildly sweet. The cottage cheese adds a creamy texture while fresh blueberries bring bursts of juicy flavor. Perfect for breakfast, snacks, or a light dessert.

  • 4 large eggs, separated

  • 1 cup full-fat cottage cheese

  • 1 tablespoon honey or maple syrup (optional)

  • 1/2 cup fresh blueberries

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.

  2. Blend cottage cheese, egg yolks, honey, and vanilla until smooth.

  3. Beat egg whites with salt until stiff peaks form.

  4. Gently fold egg whites into cottage cheese mixture.

  5. Fold in baking powder and blueberries carefully.

  6. Spread batter evenly on baking sheet, about 1 to 1.5 inches thick.

  7. Bake for 25-30 minutes until risen and lightly golden.

  8. Cool completely on a wire rack before slicing.
