  • 4 large red onions, thinly sliced
  • 1 cup apple cider vinegar
  • 1 cup water
  • 1/2 cup granulated sugar
  • 1 tablespoon salt
  • 2 teaspoons black peppercorns
  • 1 teaspoon mustard seeds
  • 2 cloves garlic, peeled and lightly crushed
  • 2 bay leaves

Instructions

  1. In a medium saucepan, combine apple cider vinegar, water, sugar, and salt over medium heat. Stir and bring to a boil until the sugar and salt dissolve.
  2. Add the black peppercorns, mustard seeds, garlic, and bay leaves to the mixture. Simmer for 1-2 minutes to release the flavors.
  3. Place the thinly sliced red onions into a large glass jar or heatproof bowl.
  4. Carefully pour the hot vinegar mixture over the onions, ensuring they are completely covered.
  5. Let the onions cool to room temperature, then seal the jar with a lid and refrigerate for at least 24 hours before serving.

Notes

  • These pickled onions taste best after 24 hours but will continue to develop flavor over time.
  • Store them in an airtight container in the refrigerator for up to 2 weeks.
  • For a sugar-free version, omit the sugar or substitute with honey or maple syrup.
