Description

These No-Bake Chocolate Coconut Treats are a simple yet delightful dessert that requires no baking! The combination of rich chocolate and sweet coconut creates a perfect balance of flavors. Ingredients

  • 1 cup semi-sweet chocolate chips

  • 1 cup unsweetened shredded coconut

  • 1/4 cup unsalted butter

  • 1/4 cup honey or maple syrup

  • 1 tsp vanilla extract

  • 1 cup rolled oats

  • 1/4 cup peanut butter (optional)


Instructions

  • In a medium saucepan, melt the butter over medium heat. Once melted, add the chocolate chips and stir until completely smooth.

  • Remove the saucepan from the heat and mix in the honey (or maple syrup), vanilla extract, and a pinch of salt.

  • Stir in the shredded coconut, oats, and peanut butter (if using), making sure everything is well-coated with the chocolate mixture.

  • Spoon the mixture into small mounds on a parchment-lined baking sheet. Shape them into balls or flat discs.

  • Chill the treats in the refrigerator for 30-45 minutes, or until they are firm and set.

  • Once set, remove from the fridge and enjoy! Store leftovers in an airtight container in the refrigerator for up to 1 week.

Notes

  • For added crunch, sprinkle chopped walnuts or almonds over the treats before chilling.

  • These treats can be stored in the refrigerator for up to 1 week or frozen for up to 2 months. Allow to thaw for a few minutes before eating if frozen.

  • For a different flavor, swap the peanut butter with almond butter or cashew butter.
