Description

This Dill and Walnut Paste is a simple yet flavorful condiment that enhances a variety of dishes. With fresh dill, crunchy walnuts, and garlic, this aromatic paste is perfect for meal prep during the winter months. Use it in soups, as a spread, or to season roasted vegetables for an instant burst of freshness!

Ingredients

Scale
  • 400 g fresh dill (including stems) 🌱
  • 80 g walnuts 🌰
  • 45 cloves garlic 🧄

Instructions

  • Prepare the Dill – Wash and dry the dill thoroughly. Roughly chop it to make blending easier.
  • Blend the Ingredients – In a food processor, combine the dill, walnuts, and garlic. Pulse until a smooth paste forms.
  • Adjust the Texture (Optional) – If the paste is too thick, add a small drizzle of olive oil or water to blend smoothly.
  • Store the Paste – Transfer the paste to an airtight container and press it down to remove air pockets.
  • Refrigerate for Freshness – Store in the refrigerator for up to 3 weeks or freeze for up to 3 months in small portions.

Notes

  • For a nut-free version, substitute walnuts with sunflower seeds.
  • To extend shelf life, drizzle a thin layer of olive oil on top before storing.
  • If you prefer a milder garlic flavor, reduce the garlic to 2-3 cloves or use roasted garlic.
  • Freezing Tip: Portion the paste into ice cube trays and freeze, so you can thaw small amounts as needed.
