1½ pounds ground beef (or ground turkey)

1 medium onion, finely chopped

2 cloves garlic, minced

1½ cups frozen peas and carrots mix

1 cup frozen corn

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried parsley

Salt and pepper to taste

3 cups mashed potatoes (prepared)

1 tablespoon olive oil or butter

½ cup beef broth

1 cup shredded cheddar cheese (optional)
Instructions

In a skillet, heat oil or butter over medium heat. Add onions and garlic; sauté until soft.

Add ground beef and cook until browned. Drain excess fat.

Stir in tomato paste, Worcestershire sauce, thyme, parsley, salt, and pepper. Cook for 2 more minutes.

Transfer meat mixture to crockpot. Add frozen peas, carrots, and corn. Pour in broth and stir.

Spoon mashed potatoes evenly over the top. Sprinkle cheese if using.

Cover and cook on low for 4–5 hours or high for 2–3 hours.
