  • 4 small to medium chicken breasts (or 2 large halved)

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • 34 cloves garlic, minced

  • 1 cup light cream or heavy cream

  • 1 tablespoon Italian seasoning or oregano

  • 1/2 cup parmesan cheese, grated

  • 1 cup spinach, chopped (optional)


Instructions

  • Prepare the Chicken: Season the chicken breasts on both sides with salt and pepper.

  • Heat the Skillet: In a large skillet, heat olive oil over medium-high heat.

  • Cook the Chicken: Add the chicken to the pan and cook for 5-6 minutes per side, or until golden and crispy. Remove from the skillet and set aside.

  • Make the Sauce: Lower the heat, then add minced garlic to the pan and sauté for 30 seconds.

  • Add the Cream: Pour in the cream and stir constantly, scraping the bits from the bottom of the pan.

  • Season and Add Cheese: Stir in Italian seasoning and Parmesan cheese.

  • Add Spinach (Optional): Stir in chopped spinach and simmer for 2-3 minutes until wilted.

  • Combine Chicken and Sauce: Return the chicken to the pan and spoon sauce over the top. Simmer for 1 more minute.

  • Serve: Remove from heat and serve immediately with your choice of side dishes.

Notes

  • For extra crunch, coat the chicken in seasoned flour before searing.

  • You can substitute spinach with kale or arugula for a different flavor.

  • Add red pepper flakes if you prefer a little heat in your sauce.
