Ingredients
-
8 oz (225 g) fettuccine or linguine pasta
-
1 lb (450 g) large shrimp, peeled and deveined
-
2 tbsp olive oil
-
3 cloves garlic, minced
-
1/2 cup (120 ml) chicken broth
-
1 cup (240 ml) heavy cream
-
1/2 cup grated Parmesan cheese
-
1/4 tsp crushed red pepper flakes (optional)
-
1/2 tsp dried oregano
-
1/2 tsp dried basil
-
Salt and black pepper to taste
-
Fresh parsley for garnish (optional)
Instructions
-
Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Drain and set aside.
-
Heat olive oil in a large skillet over medium heat. Add shrimp, season with salt and pepper, and cook for 2-3 minutes per side, until pink. Remove shrimp and set aside.
-
In the same skillet, add garlic and sauté for 30 seconds.
-
Pour in chicken broth and let it simmer for 1-2 minutes.
-
Add the heavy cream and Parmesan cheese. Stir to combine and create a smooth, creamy sauce.
-
Season with red pepper flakes, oregano, and basil. Adjust salt and pepper to taste.
-
Return shrimp to the skillet, and toss in the cooked pasta. Stir to combine, coating the pasta evenly with the creamy sauce.
-
Garnish with fresh parsley and serve immediately.
Notes
-
For extra flavor, try adding sun-dried tomatoes or spinach.
-
If you prefer a spicier dish, add more crushed red pepper flakes.
-
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of cream or milk.
