Description

Cowboy Butter Chicken is a deliciously simple yet flavorful dish that’s perfect for any occasion. Juicy chicken breasts are smothered in a rich, buttery sauce infused with garlic, herbs, and a touch of heat. Whether you’re cooking for family or hosting guests, this dish is sure to impress. The savory sauce, combined with perfectly seared chicken, creates a delightful meal that can be paired with a variety of sides to make the perfect dinner. Let’s dive into how to make this crowd-pleaser!

Ingredients

Scale
  • 4 boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • 1/2 cup unsalted butter

  • 4 cloves garlic, minced

  • 1 tbsp fresh parsley, chopped (plus more for garnish)

  • 1 tbsp fresh thyme leaves

  • 1/2 tsp red pepper flakes (adjust to your spice preference)

  • 1 tbsp lemon juice

  • 1/4 cup grated Parmesan cheese

  • 1 tbsp Dijon mustard (optional, for added tang)

Instructions

  • Prepare the Chicken:
Season the chicken breasts with salt and pepper on both sides. This enhances the natural flavor of the chicken.

  • Sear the Chicken:
Heat olive oil in a skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes per side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C). Remove the chicken from the skillet and set aside.

  • Make the Cowboy Butter Sauce:
In the same skillet, melt the butter over medium heat. Add the garlic and sauté for 1-2 minutes, until fragrant. Stir in the parsley, thyme, and red pepper flakes. Cook for another 1-2 minutes to combine.

  • Add Lemon and Parmesan:
Add the lemon juice and Parmesan cheese to the sauce, stirring until the cheese melts into the mixture. If desired, add Dijon mustard for extra tang.

  • Coat the Chicken:
Return the chicken to the skillet, spooning the sauce over the chicken. Let it simmer in the sauce for 2-3 minutes to allow the flavors to meld.

  • Serve:
Garnish the chicken with additional fresh parsley before serving. Serve immediately with your favorite sides.

Notes

  • You can substitute chicken thighs for the breasts for a juicier, more flavorful option.

  • For a richer sauce, add chicken broth or cream.

  • If you prefer a spicier kick, increase the red pepper flakes or add hot sauce.
