Ingredients
3 ½ cups bread flour
1 tablespoon sugar
1 ½ teaspoons salt
1 tablespoon instant dry yeast
1 ¼ cups warm water
2 tablespoons olive oil
2 tablespoons grated Parmesan cheese
½ cup shredded mozzarella cheese (for topping)
2 tablespoons mayonnaise (for brushing before topping)
1 ½ teaspoons Italian seasoning
1 teaspoon garlic powder
½ teaspoon onion powder
Instructions
-
In a large bowl or stand mixer, combine bread flour, sugar, salt, and instant yeast.
-
Add warm water and olive oil, then mix until a shaggy dough forms. Knead for about 8 minutes until smooth and elastic.
-
Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for 1 hour or until doubled in size.
-
Punch down the dough and divide it into 2 to 3 equal portions. Shape each portion into a sub-style loaf and place on a lined baking sheet.
-
Cover and let rise again for 30 minutes.
-
Preheat the oven to 375°F (190°C).
-
Brush the tops of the loaves with mayonnaise. In a small bowl, mix Parmesan cheese, mozzarella, Italian seasoning, garlic powder, and onion powder.
-
Sprinkle the cheese-herb mixture generously over the loaves.
-
Bake for 20 to 25 minutes or until the tops are golden and the bread sounds hollow when tapped.
-
Let cool slightly before slicing.
Notes
-
For a spicier variation, add a pinch of crushed red pepper to the herb topping.
-
You can shape the dough into rolls instead of long loaves for sandwich buns.
-
If using active dry yeast, activate it in warm water with sugar first, then add to dry ingredients.
