3 ½ cups bread flour

1 tablespoon sugar

1 ½ teaspoons salt

1 tablespoon instant dry yeast

1 ¼ cups warm water

2 tablespoons olive oil

2 tablespoons grated Parmesan cheese

½ cup shredded mozzarella cheese (for topping)

2 tablespoons mayonnaise (for brushing before topping)

1 ½ teaspoons Italian seasoning

1 teaspoon garlic powder

½ teaspoon onion powder


Instructions

  • In a large bowl or stand mixer, combine bread flour, sugar, salt, and instant yeast.

  • Add warm water and olive oil, then mix until a shaggy dough forms. Knead for about 8 minutes until smooth and elastic.

  • Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for 1 hour or until doubled in size.

  • Punch down the dough and divide it into 2 to 3 equal portions. Shape each portion into a sub-style loaf and place on a lined baking sheet.

  • Cover and let rise again for 30 minutes.

  • Preheat the oven to 375°F (190°C).

  • Brush the tops of the loaves with mayonnaise. In a small bowl, mix Parmesan cheese, mozzarella, Italian seasoning, garlic powder, and onion powder.

  • Sprinkle the cheese-herb mixture generously over the loaves.

  • Bake for 20 to 25 minutes or until the tops are golden and the bread sounds hollow when tapped.

  • Let cool slightly before slicing.

Notes

  • For a spicier variation, add a pinch of crushed red pepper to the herb topping.

  • You can shape the dough into rolls instead of long loaves for sandwich buns.

  • If using active dry yeast, activate it in warm water with sugar first, then add to dry ingredients.
