These Cinnamon Roll Bliss Bars are a delightful twist on classic cinnamon rolls, offering all the cozy flavors you love in a soft, chewy bar. Swirled with buttery cinnamon sugar and topped with a luscious vanilla glaze, they’re perfect for breakfast, dessert, or anytime you crave something sweet and comforting.

Ingredients

Scale

For the Bars:

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 1/2 cups packed light brown sugar

  • 2 large eggs

  • 2 tsp vanilla extract

  • 2 cups all-purpose flour

  • 1/2 tsp baking powder

  • 1/2 tsp salt

For the Cinnamon Swirl:

  • 1/3 cup granulated sugar

  • 1 tbsp ground cinnamon

For the Glaze:

  • 4 oz cream cheese, softened

  • 1/4 cup unsalted butter, softened

  • 1 1/2 cups powdered sugar

  • 1 tsp vanilla extract

  • 12 tbsp milk (adjust for desired consistency)

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan or line with parchment paper.

  • In a large mixing bowl, cream together softened butter and brown sugar until light and fluffy.

  • Add eggs and vanilla extract. Beat until fully incorporated.

  • In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture, mixing just until combined.

  • Spread the batter evenly in the prepared pan.

  • In a small bowl, mix sugar and cinnamon for the swirl. Sprinkle over the batter.

  • Use a knife to swirl the cinnamon sugar through the batter in a figure-eight motion.

  • Bake for 22–25 minutes or until the edges are golden and the center is just set.

  • Let the bars cool completely in the pan before glazing.

  • For the glaze, beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and milk. Beat until creamy.

  • Drizzle the glaze over the cooled bars. Let set before slicing. Serve and enjoy.

Notes

  • Let the bars cool completely before adding the glaze to avoid melting.

  • Store leftovers in an airtight container for up to 3 days at room temperature or 5 days in the refrigerator.

  • Add chopped walnuts or pecans to the cinnamon swirl for a crunchy twist.

  • You can freeze the bars after baking. Wrap well and store for up to 1 month. Thaw before serving.
