For the Crust:
- 1 cup graham cracker crumbs
- 4 tbsp melted butter
- 1/4 cup sugar
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 tbsp all-purpose flour
- 1 tbsp ground cinnamon
Instructions
- Preheat the Oven – Preheat your oven to 350°F (180°C). Line a baking dish with parchment paper and set aside.
- Prepare the Crust – In a bowl, mix the graham cracker crumbs, melted butter, and sugar until combined. Press the mixture into the bottom of the baking dish.
- Make the Cheesecake Filling – In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs, vanilla extract, flour, and cinnamon. Mix until creamy.
- Assemble the Bars – Pour the cheesecake filling over the crust, smoothing the top with a spatula.
- Bake – Bake for 25-30 minutes, or until the cheesecake is set and slightly golden. The center should still have a slight jiggle.
- Cool and Chill – Let the bars cool at room temperature, then refrigerate for at least 2 hours before slicing.
- Slice and Serve – Cut into 12 bars and serve. For an extra churro touch, sprinkle with cinnamon sugar before serving.

- Freeze for up to 1 month, then thaw in the fridge before serving.
