Description

These Cinnamon Churro Cheesecake Bars combine the rich creaminess of cheesecake with the warm, spiced flavors of churros. With a buttery graham cracker crust and a smooth cinnamon-infused cheesecake filling, these bars are the perfect treat for any occasion

Ingredients

Scale

For the Crust:

  • 1 cup graham cracker crumbs
  • 4 tbsp melted butter
  • 1/4 cup sugar

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tbsp all-purpose flour
  • 1 tbsp ground cinnamon

Instructions

  • Preheat the Oven – Preheat your oven to 350°F (180°C). Line a baking dish with parchment paper and set aside.
  • Prepare the Crust – In a bowl, mix the graham cracker crumbs, melted butter, and sugar until combined. Press the mixture into the bottom of the baking dish.
  • Make the Cheesecake Filling – In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs, vanilla extract, flour, and cinnamon. Mix until creamy.
  • Assemble the Bars – Pour the cheesecake filling over the crust, smoothing the top with a spatula.
  • Bake – Bake for 25-30 minutes, or until the cheesecake is set and slightly golden. The center should still have a slight jiggle.
  • Cool and Chill – Let the bars cool at room temperature, then refrigerate for at least 2 hours before slicing.
  • Slice and Serve – Cut into 12 bars and serve. For an extra churro touch, sprinkle with cinnamon sugar before serving.

Notes

  • Store in the refrigerator for up to 3 days in an airtight container.
  • Freeze for up to 1 month, then thaw in the fridge before serving.
  • For extra flavor, drizzle with caramel or chocolate before serving.
  • Warm slightly in the microwave for 10-15 seconds for a soft, churro-like texture
