Description

These Cheesy Garlic Zucchini Steaks are a simple yet flavorful dish perfect for any occasion. Thick zucchini slices are roasted to perfection with garlic, olive oil, and a blend of melted mozzarella and Parmesan cheese.   • 3 medium zucchinis, sliced into 1-inch thick rounds
  • 2 tablespoons olive oil 🫒
  • 3 cloves garlic, minced 🧄
  • 1 cup shredded mozzarella cheese 🧀
  • 1/2 cup grated Parmesan cheese 🧀
  • 1 tablespoon fresh basil, chopped (or 1 teaspoon dried basil) 🌿
  • Salt and pepper to taste 🧂

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  • Arrange the zucchini slices on the prepared baking sheet in a single layer.
  • Brush each slice with olive oil, coating both sides evenly.
  • Sprinkle minced garlic evenly over the zucchini rounds.
  • Top with shredded mozzarella and Parmesan cheese, distributing evenly.
  • Season with salt and pepper to taste.
  • Bake for 12-15 minutes, or until the cheese is melted and bubbly, and the zucchini is tender.
  • For extra crispiness, broil for 1-2 minutes until the cheese is golden brown.
  • Remove from the oven and sprinkle with fresh basil. Serve immediately and enjoy!

Notes

  • For extra crunch, sprinkle panko breadcrumbs on top before baking.
  • Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) for 5-7 minutes.
  • For a spicier twist, add red pepper flakes before baking
