Ingredients

Scale
  • For the Brownie Layer:

    • 1/2 cup unsalted butter (melted)

    • 1 cup granulated sugar

    • 2 large eggs

    • 1 tsp vanilla extract

    • 1/3 cup unsweetened cocoa powder

    • 1/2 cup all-purpose flour

    • 1/4 tsp salt

    • 1/4 tsp baking powder

  • For the Cheesecake Layer:

    • 2 (8 oz) packages cream cheese, softened

    • 1/2 cup granulated sugar

    • 2 large eggs

    • 1 tsp vanilla extract

    • 1/4 cup sour cream

    • 1 tbsp all-purpose flour

  • For the Caramel Topping:

    • 1/2 cup unsalted butter

    • 1/2 cup packed brown sugar

    • 1/4 cup heavy cream

    • 1/2 tsp vanilla extract

    • Pinch of salt

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan with butter or line it with parchment paper.

  • For the brownie layer, whisk together melted butter and sugar, then add eggs and vanilla extract. In a separate bowl, combine cocoa powder, flour, salt, and baking powder. Gradually add dry ingredients to wet ingredients. Pour into the prepared pan.

  • For the cheesecake layer, beat cream cheese and sugar until smooth. Add eggs one at a time, followed by vanilla extract, sour cream, and flour. Pour over the brownie layer in the pan.

  • Bake for 50-60 minutes or until the cheesecake is set and slightly jiggly in the center.

  • While the cheesecake cools, prepare the caramel by melting butter, brown sugar, and heavy cream in a saucepan. Let simmer for 2-3 minutes, then remove from heat and stir in vanilla and salt. Let cool.

  • Once the cheesecake has cooled, drizzle the caramel over the top before serving. Slice and enjoy!

Notes

  • For added crunch, sprinkle chopped walnuts or almonds over the cheesecake before baking.

  • Store leftovers in an airtight container in the refrigerator for up to 4 days.

  • For a different flavor profile, you can substitute the caramel with chocolate ganache or raspberry sauce.
