  • 2 tbsp lemon juice

  • Kosher salt (to taste)

  • 300 g double cream brie cheese

  • 1 tbsp chopped fresh thyme

  • 8 slices sourdough bread

  • Butter (as needed for grilling)


Instructions

  • Make the Blackberry Balsamic Jam: In a saucepan, combine the blackberries, balsamic vinegar, sugar, lemon juice, and a pinch of kosher salt. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for 7-10 minutes. Mash the blackberries as they cook, breaking them down into a thick, syrupy jam. Let the jam cool.

  • Prepare the Brie Cheese: Slice the brie into ½-inch thick pieces and set aside.

  • Grill the Sandwiches: Heat a skillet over medium heat. Butter one side of four slices of sourdough bread and place butter-side down in the skillet. Top with slices of brie cheese and cook until the bread is golden brown and the cheese begins to soften. Sprinkle with chopped thyme.

  • Assemble the Sandwiches: Spread a thick layer of blackberry balsamic jam on the remaining four slices of bread. Place the jam-covered side down on top of the melted cheese. Butter the top side of the bread, then carefully flip the sandwich. Cook until the second side is golden brown and the cheese is fully melted.

  • Finish the Sandwiches: Let the sandwiches cool for a couple of minutes before cutting in half. Serve warm and enjoy!
