Description

Ingredients

  • 2 ripe avocados (firm but ripe)

  • 23 medium tomatoes (heirloom or cherry tomatoes work well)

  • 1 cup fresh mozzarella (bocconcini or ciliegine)

  • A handful of fresh basil leaves

  • 2 tbsp extra virgin olive oil

  • 1 tbsp balsamic vinegar

  • Salt and pepper to taste


Instructions

  • Start by preparing the ingredients. Slice the avocados in half, remove the pit, and scoop out the flesh. Slice them into wedges or cubes.

  • Slice the tomatoes into rounds or halves.

  • Tear the fresh mozzarella into bite-sized pieces or slice if using larger mozzarella balls.

  • Arrange the avocado, tomato, and mozzarella slices on a serving platter, alternating them to create a beautiful pattern.

  • Scatter fresh basil leaves over the top for added flavor and color.

  • Drizzle the olive oil and balsamic vinegar evenly over the salad.

  • Season with salt and freshly ground pepper to taste.

Notes

  • For added crunch, sprinkle some chopped walnuts or pine nuts over the salad.
